If you click and hold and move one of the Max or Min numbers, they will change. This is because you can set a Touche control to start from say 2, rather than zero, and to hit a max which is less than full-on, just like on the Lie app, if you look, in the Lier app - you'll see that you can move the markers on the slider fader thing on the right of each control, or handyshifting or whatever they decided to call them.
Again, in Lie you can scroll through a list of assignments for each shifty, most are CC assignments, so I assume,( YMMV, IDK) that one of those is the CC for pitchbend.
